Low Fat Crock Pot Chicken Curry

Ingredients:

  • 1 ¼ Chicken Breasts cut into pieces
  • 500g Thinly Sliced Onion
  • 2 Medium Red Potatoes peeled and cubed
  • 1 Large Carrot sliced
  • 1 Large Apple peeled, cored and cut into chunks
  • 60g of Raisins
  • 120ml Low Sodium Fat Free Chicken Broth
  • 1 tble of Curry Powder
  • 60g of Reduced Fat Sour Cream
  • 1 tble of Corn Starch

Procedure:

Spray the inside of a 3 to 4 Liter crock pot with non-stick cooking spray. Place the onions, potatoes, carrots, apples, and raisins in the bottom of the crock pot. Sprinkle curry powder over all. Next, add the chicken breasts. Pour chicken broth over them. Cook on low heat for 4 to 6 hours. About 30 minutes before the dish is done, combine the sour cream and cornstarch and stir into the dish. Finish cooking and it will be ready to eat. Serve over rice. It makes enough to feed 4 to 6 people.
